Both the menu and interiors of my new restaurant, Brasserie B, are designed with Parisian brasseries in mind, so of course the cuisine hits many French classics. Steak frites is a must at any brasserie, but this version also brings tons of the impactful, bold flavors I’ve become known for.
Technique tip: Soak your potatoes for at least 2 to 3 hours, but they’ll turn out that much better if you’re able to soak for 24 hours.
Swap option: Adjust the amount of chipotle to your heat preference or leave out completely if you’re not a chipotle fan.
