For supper, I made two homemade Detroit-style pizzas completely from scratch. Since none of the stores in my area carry Brick cheese, I used a blend of mozzarella and cheddar instead. For the toppings, I went with pepperoni and Italian sausage — my roommate and I both really enjoyed them.

  2. Yum! How did the bottom come out? I find a little extra olive oil on the pan makes it really yummy and crispy and also putting the cheese right up to the side of the pan so it turns black is super yummy.

I skip the cheddar and just use mozzarella (cut into blocks, put down first with three lanes of sauce on top) which works well. If you like t I suggest one of the Detroit pizza pans with the high edges that lets you put the cheese right up to the edge which makes it really crispy.

I’ve never been to Detroit, but if this is what they call pizza, I am not missing much.

The bottom came out perfectly crispy, just like the recipe promised — I used the full 3 tablespoons of olive oil in the pan. These pans are 9”x13” and deep enough for the job. I spread the cheese evenly across the entire pan, as instructed. I would’ve cut the cheese into smaller pieces, but my arthritic hands had other plans. For my first try, I think I did pretty well!
