Ingredients
▢12 oz uncooked orzo pasta
▢Kosher salt and ground pepper, to taste
▢1 English cucumber, diced
▢1 red bell pepper, chopped
▢1 small red onion, chopped
▢1 pint cherry tomatoes, halved
▢1/2 cup pitted Kalamata olives, halved
▢1/2 bunch fresh basil, leaves picked and chopped
▢1/2 cup crumbled feta
▢1 tsp dried oregano
▢3 tbsp extra virgin olive oil
▢2 tbsp balsamic vinegar
Instructions
Cook the orzo pasta according to package directions, then drain and set aside to cool. Season with salt and pepper, to taste.
Meanwhile, prepare all the veggies for the salad and add them to a large bowl.
Once the orzo pasta is cool, add it to the bowl with the veggies. Add in the crumbled feta, oregano, and drizzle with the oil and balsamic vinegar. Stir to combine.
