A few weeks ago, I made marinated eggplants… and now I am making marinated zucchini. No cooking this time, just a beautiful, balanced blend of olive oil, vinegar, and the gentle contrast of sweet and sour. Parsley, mint, basil, and garlic merge slowly, becoming something truly Sicilian. Make them now and hide them away… otherwise, you will eat them.
By Christmas, they will be perfect, a beautiful side, or simply enjoyed on rustic bread.

It’s just a beautiful and balanced blend of extra virgin olive oil, vinegar, and that gentle contrast of sweet and sour agradula. Here I’m combining parsley, mint, basil, and garlic where the flavors merge slowly together becoming something truly Sicilian. But make them now and hide them away though. Otherwise, I can guarantee that you will eat them by Christmas. They will be perfect. They can be a beautiful side dish or simply enjoyed on rustic bread. No cooking, just flavor.
