This recipe reminds me of grandma and know when they used to be in the kitchen making these good old sweet potato pies for the holidays. Start by poking holes in your sweet potato. Then rub it down with some oil real good. Lay it on the sheet pan and bake these off on 400 for about an hour. Let them cool for like 15 minutes before pulling that skin off. Now, I like to add mine to the food processor, y’all, just to give it nice and smooth. All right, your sweet potato should be lump free and string free. And I’m going to show y’all how smooth that sweet potato batter is. Look at that, y’all. Now, go ahead and set that to the side, honey, until we’re ready for it. Now, in the meantime, get you some melted butter and brush the inside of those deep dish pie shells with the melted butter real good. And add you a little brown sugar to coat the bottom of the pan. Just like that. Bake them off on 350 for 10 to 15 minutes. Now for the sweet potato filling, you want to add you a cup of white sugar, cup of brown sugar, also a half2 cup evaporated milk, some cinnamon and nutmeg, a half a juice lemon and orange, 2 tbsps of sweet condensed milk, a tablespoon of vanilla bean, y’all. Give it a good mix. Honey, now it’s time to add in that one stick of melted unsalted butter. Give that a good mix. Now, taste your batter before adding in your three eggs. I did end up adding in more sugar and a little bit more cinnamon. So, it’s all on taste preference. All right. Okay, let’s check on these pie shells. Now, as you can see, my pie shells has bubbles in it. Do not pop the bubbles, y’all. For the people in the back not listening, do not pop the bubbles. Trust the processing. You want to bake your pies on 350° for about an hour.
