Not sure if this has been shared before, but it was new to me and I had to post because… wow.

I had a cucumber/tomato/red onion salad in the fridge that had been marinating for a couple of days – just lemon juice, red wine vinegar, garlic, oregano, and salt. The veggies were still great, but the real MVP ended up being the leftover juice at the bottom of the bowl.

I poured it over a big chicken salad (romaine, the marinated cucumber mix, grilled chicken, a bit of feta, chopped almonds, and a sprinkle of mini Mediterranean croutons), and it basically turned into a flavor explosion for like 350-370 calories total.

No oil, no store-bought dressing – just the tangy, garlicky leftover marinade doing the most. I genuinely might start making cucumber salad just to harvest the juice.

Highly recommend if you're into volume eating, hate boring salads, or enjoy getting maximum flavor with minimum calories.
