First time using diastatic malt powder. Perhaps a little darker on the outside than some people would like but the crumb is nice and proper imo. I like the crunch of the outside so these are to my taste. Pretty dang chewy and crunchy. Cooked down a handful of frozen blueberries to go with the cream cheese

    I gotta get some. I got barley malt syrup, but the malt powder seems like an equal upgrade

  4. These look like the best homemade bagels I have ever seen. Well done!!! I love adding diastatic malt powder.
    I’ve been thinking of using the barley syrup in dough and food grade lye in water (never have used lye in water – or ever) after seeing a receipt recently.

    These remind me of sidedoor bagels in Indianapolis.
