2 cup sweet potato blended
3 eggs
1 stick butter
1/2 teaspoon cinnamon
1/2 nutmeg
1 cup sugar
1 cup evaporated milk
1 teaspoon lemon extract
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 tablespoons flour
1 teaspoon vanilla extract
9 inch pie crust
Bake on 350 for about 55 minutes
How y’all doing? Chef Charles back in the kitchen and you’re watching Everything Sweet. We’re getting ready for the holidays. I don’t know what y’all doing. We getting ready. Okay, today we’re going to make sweet potato pie. Okay. Um, go ahead and bookmark, you know, this for Thanksgiving and Christmas. Okay. Uh we getting ready for the holidays now. You know this time of year when I was working uh we start getting ready you know this month for you know Thanksgiving crew what we’ll do we’ll bake all day then just before we go home we’ll roll pie dough pie shield. Okay. And the recipe we had then well when the recipe former different in a former you know recipe can change former you got to use it you know just like it is just like what it say just like coat and pepsi and all these other big company and they got form they don’t have recipes but we done broke it down where we can make it into a recipe but we that the batch we make would make 24 pine shields and every day before we went home that was the last thing we do we roll 24 pie shells, you know, and from October, November, December, you know, you can add up how many shell we had. What you don’t want to do, you didn’t want to run out. So, you know, 5 600 shells, you know, that make apple pies, you know, whatever kind of pie you want, you go ahead and get get the shells ready and put them in the fridge. And by the time it’s time to start producing to fill all your orders, you already got your shells done. And all you got to do is make your pie filling. Now we’ll make pie filling in five gallon buckets. Get that ready. So basically a lot of the work was done before the orders came in. All right. And what you need to get this sweet potato pie up and running. All right. We got three eggs. We got about a cup of milk. That’s evaporated milk. We got two cups of sweet potatoes. Now we put those in the blender to get all the strings out of them. We got one cup of granulated sugar and the little cups that we got one tablespoon of flour and we got the onion nade and one stick of butter. We got a 9 in pie shell, a pie pan. Now we going to roll our pie shell because that’s what we do. Now you can get them at the grocery store, you know, already prepared, already made to go in the frozen department. Either you can go to the dairy department and get the pie shell with two in a pack and roll it yourself. Okay? So, it’s up to you how you want to tackle it, what kind of shell you want. Okay? We got a 9 in pie shell here and we’re going to put a little flour down. We’re going to roll our shell. Okay. Now, that you make yourself this keep them in the cooler and how you actually get ready to use them. Okay. Got a little disc we made. Press it down here. Now, you want to keep flour flour going to keep your rolling beans from sticking to it and keep it from sticking on the table. But like I said, you go in the throw department, you bypass all this and they work just as well. I just like to roll and make mine myself. And another reason I make it myself, I know what’s in it. I don’t have to guess. What you want to do is make sure it’s down to the power pan. You want try to get all the elbow elbows out. Okay. You want to make sure it fit nicely in your pie pan. All right, we’re going to trim the edges off just a little bit. start crimping the edges. And all you’re doing is pushing out, pulling in with the other thing. We got our oven on 350. Should take anywhere from 45 to 50 minutes to bake. Like I said, depends on, you know, your oven. But after 40 minutes, take a look at it. All right, we got that done. I’m going to set that to the side. Let that sit right there. And we’re going to start making our pie filling. We going to the bowl. Okay. We got a W whip on there. We’re going to put our two cups of potatoes in. Now, most folks say two or three potatoes. But, you know, I don’t set two or three cups of potatoes. I want you to know exactly what put in them. You know, you go get the potatoes. Are they small potatoes? Are they big potatoes? You don’t know. So, I got three potatoes and I baked them. Never boil them. Baked them. Then I got the food processor to process them. Make sure all the strain was out. All right, we got that in. Got a tablespoon full of flour that’s going in. Got one stick of melted butter. We’re also going to add that in. Now, we’re going to let that mix. That recipe shouldn’t take you all day. Okay. [Music] Okay. We got jing cinnamon and egg going in. We got three eggs. Going to beat them just a little bit. Just break the yolk up. Add them in. We’re going to let that mix. [Music] Got our one cup of milk. Sugar going in. One cup of sugar. Mix that for about a minute. Milk is going in now. Mix. Add a teaspoon of lemon extract. One teaspoon. And we add teaspoon of vanilla extract [Laughter] in gear. I’m going to scrape the saddle off. roll down and make sure we got it all in there. We don’t want, you know, nothing hiding side. We don’t want nothing hiding on the bottom. All that in the main batch. Okay. Now, we’re going to let that mix for another minute and second here, and we’ll be ready to go to our pie shell. Now, we’re going to mix it one more time while it’s in the bowl. Make sure we got everything the way it’s supposed to be. Okay. And we start adding to our pio. Smooth that out. Top just a little bit. All right, into the oven we go at 350 45 to 50 minutes. Okay, so we’ll see y’all back here in about 45 minutes. All right, I put 45 minutes on there and 45 minutes what it took. This is your southern sweet potato pie. Okay, now you know we can’t taste test right now. We talking two maybe three hours down the road. But whenever it cool, we will be back to taste that. But now don’t go away. We’re going to make another sweet potato pie. Except this going to be a cream cheese sweet potato pie. So y’all stay with us, okay? Sweet potato pie, southern style. Baby, this Mississippi style sweet potato pie. Now you probably can get another recipe from Alabama, Tennessee. Probably got a few in Chicago, but this way Mississippi do it. Okay. Mississippi sweet potato pie. See that baby? Tell you all the color still there. Only way you get that, you got to bake it. You can’t boil it. Get that color. Then you don’t have to add no color. Okay? And all the proteins and vitamins still in because we baked it. When you boil it, you boil all that out of there. A little ice cream on the side here. M. Oh man, I’m going try me a people die ice cream cuz the ice cream kind of throwing my taste off. Let me try this people die ice cream. Mhm. Okay. What I thought this it basically melts in your mouth. You know when kids come home for holiday, the first thing they want is mama cookie. Holiday, they already know they want some pie, sweet potato pie. They want some pecan pie and they want that mama favorite dressing. Okay, listen. Get to this sweet potato southern style. Get to it, baby. You need to be calling somebody. [Music] You need to be on the phone calling somebody about southern style sweet potato pie. Lord hammade made from sweet potato yam. We’re going to say yam cuz a lot of folk get that few sweet potato and yam that’s two different thing. Just made from sweet potato mix my grown. Okay, I’m talking about where you going to get all that at Lord. How much? I’m probably going to eat all this little piece on my soul. That just good. That’s all of myself out there. And uh you know when you make it, you got to sample it. It’s a whole carbon to build a house then you say I ain’t going to stay in it. My grandma is from the Delta. That's the sweet potato pie that I was raised on and my mom passed the recipe to all the females in the family daughters and wives.
