47 g starter (I have used both fed and unfed with success!)

23g salt

23g honey

93g sesame seeds + more for topping

744g water (90-110 degrees)

372g whole wheat

558g bread flour

Mix all ingredients except flours to allow salt and honey to dissolve. Then add in flours, and mix until all dry flour is incorporated. Let sit for 30 min or so, then perform a few stretch and folds (5-10). Over the next 1-2 hours, perform 2-3 more sets of stretch and folds. Let sit until risen and bubbly (this is 12ish hours in my cool kitchen). Shape loaves, coat with sesame seeds, and place in banneton in fridge overnight. Bake the next morning at 450 degrees, 20 min covered, 20 min uncovered.
