   Evertime i go they only have huge slabs of meat. Not sure if i just miss the smaller ones or they dont have any.

   Id like to try a brisket but so much food.

    Trimming a full brisket is an art, and not as easy as some of legends in this sub make it look! Nice work, I bet it tasted amazing.
