    While the overall cook is as good as I have seen, I would like to see the fat cap crisped up a bit more. But I would definitely eat that steak in a heartbeat.

    Beautiful. I try to dry out the fat cap as much as I can (via salt brine) so when I throw it into the salamander (or sear it in the cast iron) it gives an almost chicharon type texture. Try that out next and see if you like it
