So, the woman who taught me how to make this recipe was almost offended when I asked her if there was chicken stock in it, which I get why she was offended. A dried chickpea can really do a lot. But I had to ask because I am a very untrusting pescatarian. And whenever something is insanely delicious, I feel like there is some layer flavor that I’m missing. And the chickpeas that she served us, mind you, this is in Sicily after 5 days of eating nothing but pasta and seafood. But the chickpeas she served us were so soft and tender and flavorful that I thought there had to be something else. And she was like, “No, honestly, the only thing is the safo that you don’t even cook and a lot of time.” And sometimes I feel that like life is a pressure cooker of getting everything done quickly. And this is a nice reminder that if you just put in good stuff and wait a bit, sometimes what comes out is really great. Don’t you hate it when Sicilian grandmothers are ripe?

  1. Time is an ingredient. It’s the different between a soft, slow cooked brisket vs a hard lump of meat cooked to high and fast.

  2. We are doing chickpea soup for all our lives,onions,carrots and potatoes,most people only puts onions and the chickpeas and lemon of course and olive oil and always bread and feta cheese! kisses from Greece ❤

  3. I semi regularly do 24+ hour water fasts and if I make a tisane with mixed roasting herbs and lemon + salt (mostly for electrolytes) I swear it tastes EXACTLY like chicken broth. Can totally imagine this with extra umami from the cheese + the flavours from carrots/celery/onion. Literally everything but the chicken!

  9. The omnivore instinct to add chicken stock to everything makes me very suspicious to any kind of dish as a vegetarian.
