Hello, l've recently started baking a lot of pizzas at home and normally I buy my low moisture Mozz at Trader Joe's. I've started making enough pizzas that is kind of annoying as they sell in 1lb blocks.

Any recommendations on where to buy like 5-15lbs of low moisture mozzarella at a time? Ideally not pre-shredded and at a store that is north (I live in Evanston). I haven't seen such a thing at the Costco's by me. And there are no dedicated Italian groceries by me.

Appreciate the help. Pizza pic for attention.

I usually get my blocks of Widmer Brick and Mozz for pizza from Shop and Save.

I’d just call a cheese shop or a local pizza shop and see if you can buy it off them. Alternatives are a to try and call GFS and see if you find it in their stores or get it shipped to a store.

Last time I made a bunch of sheet pan pizzas, I went to the closest Marianos deli and just asked the to chop their big block of low moisture mozzarella in half and that was that.

Jewel, Whole Foods or Mariano’s, they usually got a block of whole milk and part skim mozz you can ask for a block

  5. Gordon’s food service has grande mozz which is what most pizzerias use.

If you can find anyone with a Restaurant Depot membership, they sell big bags of it there

You can probably ask for one of the big block packages from a deli at any grocery store

The Jewel by me sells Wisconsin Brick Cheese by the pound. That’s where I’ve grabbed my cheese from when I make Detroit Style Pizza.

I feel like I’ve seen a hulking bulk of mozz at the Costco on Clybourn, but I can’t swear to it…

  10. The Tony’s Fresh Market at Berwyn and Western regularly has large blocks (3lbs+)of Galbani mozzarella on sale for $2.99 a pound.

  11. The Costco Business center in Bedford Park should have it. I bought a 5lb block at a close out price last year.

  12. Fresh farms on touhy at the deli counter. They’ll cut you a chunk and are pretty accurate when doing so.

Looks like you’ve been helped, but I have to know…what recipe are you using for the crust 👀

I get scamorza from Caputo’s. Pricey but very, very good.

Obviously it’s not just something that can be done overnight, but just looking at this picture – if you had a restaurant, I’d try it.

Go to restaurant depot and request a daily public pass. If not Gordon Food Service also sells them.

  17. The Whole Foods on Green Bay often has Grande that they’re cutting themselves. I would just ask them to cut you a big piece.
