Help would be greatly appreciated. The batter included freeze dried strawberries. I could not get my macaronage to lava consistency after mixing for probably 30 minutes.

I let the piped batter rest for an hour before baking. The first batch (which raised well but cracked) was baked at 275 F for about 20 minutes. After they finished, I lowered the temp to 250 and baked the second batch. These didn't raise, but they also didnt Crack. I baked for about 25 minutes.

Both batches are very chewy, more than I expected.
