    If I’m understanding correctly, you are saying:

    490f for 5 seconds (full steam)

    Remove bread and drop to open vents/partial steam at same temp for 25 minutes?

    Then no steam for another 20 min same temp?

    If the NDA allows, can you share a photo of how they look after proofing, before and after scoring? Or even better a video of the score

  6. I’ll see what I can do tomorrow but make no promises I said on another comment I plan on making a small video soon and I’ll be using a recipe I got from a book so that’s all fair game
