
Certainly not traditional but tasty!
1 carrot
1 celery stalk
1/2 white onion
1 T minced garlic
a handful of cherry tomatoes, halved
1 can of fire roasted tomatoes
chopped fresh parsley
parmesan cheese
balsamic vinegar
salt & pepper
dried oregano & basil
garlic powder
onion powder
Four eggs
Olive oil
Basically just saute the onion, carrot, celery, cherry tomatoes, and garlic in olive oil until they gets a little soft then add in fire roasted tomatoes. Add salt & pepper, spices, grated parm, and balsamic vinegar (probably around a teaspoon) and let it simmer for basically as long as you want (based on how desired flavor and/or firmness of veggies). Crack in four eggs, let them poach to preferred doneness, garnish with parsley, salt, pepper, parm, and serve with olive oil toasted whole wheat bread!
