If you love pizza, you’ll fall in love with Turkish Pide — a delicious boat-shaped flatbread loaded with flavor! In this video, I’ll show you how to make two amazing versions: a super cheesy pide for the kids and a hearty vegetarian one packed with fresh veggies and cheese.
We’ll make the dough from scratch, prepare a creamy olive dip on the side, and serve it hot with a drizzle of fresh lemon juice. Perfect for lunch, dinner, or a weekend family meal!
Homemade Turkish Pide Recipe (2 Ways – Cheese & Vegetarian)
🧂 Ingredients
For the Dough:
3 cups (750 g) plain flour
10 g dry yeast
1 tsp sugar
1 tsp salt
2 tbsp melted butter
360 ml lukewarm water
For the Cheese Pide:
Mozzarella cheese (grated)
Bocconcini cheese (optional, for that cheesy stretch)
Grape tomatoes (halved)
Dry parsley (for garnish)
For the Vegetarian Pide:
Mozzarella cheese (grated)
Feta cheese (crumbled)
Bocconcini cheese (optional)
Baby spinach leaves
Sliced onions
Sliced capsicums
Mushrooms (sliced)
Tomatoes (sliced or cherry)
Salt, pepper, and chilli flakes
Dry parsley
For Garnish:
Butter or egg wash (for brushing)
White and black sesame seeds
Olive oil & fresh lemon juice (to serve)
👩🍳 Method
Step 1: Prepare the Dough
In a large bowl, add flour and make a small well in the center.
Add lukewarm water, yeast, sugar, salt, and melted butter.
Mix well until a soft dough forms.
Transfer to a floured surface and knead for 8–10 minutes until smooth and non-sticky.
Fold the edges down to avoid cracks, place in a greased bowl, coat with a little oil, cover with a damp cloth, and let it rest in a warm place for 40–45 minutes or until doubled in size.
Step 2: Shape the Dough
Once risen, punch down the dough to release air and knead lightly.
Divide into equal portions, shape each into a ball, and cover again with a damp cloth for 5 minutes.
Dust the surface and roll each ball into an oval shape.
Step 3: Fill & Shape the Pide
For the Cheese Pide, add mozzarella, bocconcini, and grape tomatoes. Sprinkle dry parsley.
For the Vegetarian Pide, layer mozzarella, spinach, onions, capsicums, mushrooms, tomatoes, feta, bocconcini, and season with salt, pepper, chilli flakes, and dry parsley.
Fold the sides inward and pinch the ends to form a boat shape.
Brush with melted butter (or egg wash) and sprinkle white and black sesame seeds.
Step 4: Bake
Preheat oven to 200°C
Place the tray on the bottom rack first for a few minutes, then move it to the top rack so it cooks evenly and gets a golden crust.
Bake until the pide is golden brown and crispy on the outside, soft on the inside.
Step 5: Serve
Serve hot with a drizzle of fresh lemon juice.
Enjoy with your favourite dips — olive dip, hummus, or a light green salad on the side.
Tip:
If you’re making it for kids, go extra cheesy! You can also add minced meat, chicken, or lamb for a non-vegetarian version.

HUMMUS RECIPE –
[Music] If you love pizza, wait till you try Turkish Payday. It’s perfect mix of crispy crust, soft dough, and rich savory toppings, but with a unique twist that makes it stand out. It’s simple, satisfying, and packed with bold vegetarian flavors. Let’s bake it together. [Music] Take three cups of flour. That’s about 750 g. [Music] And make a little well in the center. Now add around 360 ml of lukewarm water, a pinch of salt, a bit of sugar, [Music] some melted butter, and 10 g of dry yeast. [Music] Mix it all together until it forms a soft, smooth dough. [Applause] [Music] Now we are going to transfer the dough onto the surface. But before that, sprinkle a little dry flour. Start kneading by stretching the dough and bringing it back together. Use the pads of your palm to knead. That’s where the real magic happens. And repeat this process until it’s smooth and no longer sticky. And honestly, I think I have just finished my workout for the day. As you can see, our dough is perfectly done. soft, smooth and no longer sticky. Now fold all the edges downwards so there are no cracks on top. I am using the same bowl. Just make sure to oil it well first. [Applause] Place the dough inside and lightly coat it with oil all around. This will keep it soft and prevent it from drying out. Cover the dough with a damp cloth and let it rest for 40 to 45 minutes, making sure to keep it in a warm spot. While our dough is resting, let’s move on to making an olive dip. It’s the perfect companion for our Pday. In a mixing bowl, I have added calamata olives and some green green olives along with garlic, salt and pepper. But be careful with the salt since olives already have some [Music] to this. I’m adding a pinch of mixed herbs and of course some olive oil. [Music] Blend everything into a smooth paste. For garnish, I have added some chopped olives, a sprinkle of parsley, and a drizzle of olive oil. And just like that, your olive dip is ready. Hummus also pairs beautifully with pday. I’m going to punch it down to release all the air. Then bring it back onto the surface for a little knead. [Music] Roll it out and divide it into equal portions. [Music] If one’s a bit too big or small, you can always adjust it. [Music] Now take each dough ball and fold the edges downwards so there are no cracks. Lightly dust a tray with dry flour and place the balls on it. Making sure to leave enough space between each one as they’ll rise again. Cover the dough balls with a damp cloth again so they stay nice and moist. After resting for about 5 minutes, our dough balls are ready to roll. Lightly touch the surface before you start. Take one dough ball, making sure there’s enough dry flour so it doesn’t stick to the rolling pin or the surface. Now we are going to roll it out into an oval shape just like the classic pa base. [Music] I’m going to make two different pates today. one especially for my kids with just cheese and tomato and of course extra cheesy. Before you start adding the toppings, just dust off any extra dry flour. To start with, add plenty of mozzarella cheese, a few bokon chini pieces for that perfect cheesy stretch, and some grape tomatoes. I haven’t added any salt or pepper, but feel free to to if you like. And finally, sprinkle a little dry parsley on top. Now, to give it that classic board shape, start folding the sides inwards and gently pinch the ends to create those pointy pointed edges. [Music] I don’t eat eggs, so I’m brushing mine with butter, but you can use an egg wash if you prefer. Finally, sprinkle some white and black sesame seeds on top for that perfect finish. I have already got my oven preheating at the highest temperature around 200°. We’ll place our tray on the bottom rack first and after a few minutes move it to the top rack so it cooks evenly and gets that beautiful golden crust. Meanwhile, I’m going to make another vegetarian pa. I have rolled it out the same way as before. To that I’m adding some cheese, baby spinach leaves, sliced onions, capsicums, [Music] mushrooms and tomatoes. Then a bit of salt and pepper. A sprinkle of chili flakes for that extra kick. And of course, some feta cheese, bok chini, and a touch of dry parsley on top. We are going to fold and finish this pa just like we did with the cheese p. Here I have used my preferred toppings, but you can use whatever you like, including your choice of meat or veggies. Before we move the tray to the top rack, take a look at the bottom of our p. Nice and golden, just the way we want it. The vegetarian p is still baking. And after a few minutes, look at this. Our cheese pa is ready. Golden and crispy on the outside, soft on the inside, and so cheesy that no kid can resist it. Our vegetarian p is also ready. And I can’t take my eyes off it. Just look at that golden color and crispiness. The aroma is incredible. and I can’t wait to take a bite. Enjoy it with your favorite dips. We are having ours with homemade olive dip and hummus.
