

Hey all. I bought this steak at an Argentine butcher near me, who labeled it as a vacío – essentially, skirt, flap, and flank all together. After watching a few cooking videos, I’ve realized what I got here likely isn’t the same vacío that’s sold in Argentina. Regardless, I’m planning to cook it slowly over indirect heat in my weber kettle today. It’s about 2 kilos, so I’m curious if anyone thinks this was maybe half of a vacío if such a thing exists? Kinda bummed but I’d like to know what I’m cooking.

Flank steak or skirt steak it looks like to me
Looks like flank steak to me. I usually marinate in something acidic (balsamic vinegar, oil, herbs, etc) to tenderize before grilling.

Looks like a good candidate for a good citrus-y marinade and grilled into some carne asada tacos
It’s flank
Looks like a trimmed flank to me, similar to flap but not skirt steak. Untrimmed Vacío properly cooked over coals till pink and crispy is a great cut for a large group.

I’ve visited Argentina a few times and vacío is my favorite when I’m there. Wish I could find it in the US.
Bavette (sirloin flap meat). Here in New England this is used as steak tips, one of the best cuts of the whole animal. This is not flank or skirt like other comments I’ve broken this down off the side of beef thousands of time and cleaned it for retail cuts.

One glance at the grain orientation says it’s not flank steak. LOL at all the comments saying it’s definitely flank.
I’ve seen it sold in Texas as sirloin flap, bavette or sirloin fajita. Comparing to online videos it does look like a part of the vacío but it is not the entire vacío cut.

It is sirloin flap meat. Make into steaks or carne asada. Great beef flavor and tender as well
