
Took my papa's goulash and threw in beans. That is all. Filling, satisfying, perfect.
- Any noodles. 1/2 a box is fine for 4 meals. Hell, probably could throw this on rice or potatoes.
- V8 juice. Enough to wet things down to your liking. Freeze the rest.
- Ground meat. Beef or turkey works great. 1/2 pound per 1/2 box noodles is fine.
- Frozen or canned veg of your choosing. I use frozen peppers, onions, mushroom.
- Seasoning.
- Beans. Got chili beans? Great. No? Drain whatever beans you have. I regularly use pork n beans. It's fine.
- Whatever cheese is in the house.
Cook up the meat & veg, season. Boil up the noodles. Drain them, butter them, salt them. Mix the V8, meat, beans, veggies, season to taste, warm it until it reduces down.
I mix my noodles in last minute to avoid them falling apart.
If you're wondering, that on the side is apple sauce and cheese toast.

I used to think I hated goulash. Turns out I just hated what my grade school called goulash.

I make this too, it’s a very versatile and flexible recipe! Ive used lentils in place of beans, added canned corn, sometimes chopped zucchini, squashes or sweet potatoes…it’s always good.
Midwest goulash is always in my rotation. A cool one I learned lonnggggg time ago when working at a Vietnamese restaurant the workers would make late night.It’s basically the same ingredients just skip the beans and add soy, hoisin, lime, and cilantro and put it over rice. Wish I remembered the name of it. I make that once in a while.
