Made birria tacos yesterday and didn't want those delicious juices going to waste today!

Queso fresco worked out perfectly for melting into the broth without clumping up.

No tare needed, but I enjoyed a mix of lime zest, lime juice, homemade hot chili crisp, and grated garlic.

Serving up a more complicated extra spicy version for friends over the weekend.
