I would have done the onions first, add in the corn, then set aside in a bowl. Then do the sausage so they can brown properly, then add the veg back in again.

Next time cut them sausages thinner. Cook down the onyo more first. Get em nice and bring them add butter and garlic, then brown the sausage in it. Add more butter and pasta. Maybe some parm, get it creamy.

Slice up the sausage smaller. I cut a whole link down its side/edgewise and then cut what you have like 3-4 more times, like a bunch of little half-moons. Get some sausage on every spoonful.
Onion is a good start always. Canned corn doesn’t hurt, best canned veg. Throw in any additional fresh veg you have laying around in your refrigerator, dice up some carrot maybe, some chopped up kale or spinach or other greens, a jalapeΓ±o or serrano or three maybe (cut in half and scoop insides/seeds/white pith out with a spoon for less spicy), anything. Fresh chopped garlic the last few minutes of sauteeing the veg is always gourmet.
Then one of two options: tomato-y or gourmet beanie weenies.
For tomato-y, like okra gumbo, take a can or two of RoTel (diced tomatoes with chilies, or just plain canned diced tomato if RoTel isnt available where you’re at), drain the juice out but save it in a bowl, add the diced tomato/RoTel and a big ‘ol squirt of ketchup. Stir it all up and turn heat to med-low and let slow simmer a while. Add the drained juice if it’s too thick and needs thinning out.
For gourmet beanie weenies, do the abkve with added veg but instead of canned diced tomato basically just add a big can of baked beans to the whole thing. I do this at least a couple times a year and make a big pot of it and besides the baked beans add a can of drained other beans like black beans and/or kidney beans and similarly cook the whole thing on medium-low for a while to let everything cook together. He’ll, can still add a can of RoTel or canned diced tomatoes to that.
Both of these are very forgiving and just basically kitchen-sink types of meals. When you think it’s done, take a spoonful of it and try it and maybe add some spices or a bit of sugar or salt or something.
