I mean there’s only 5 options… I’d try all 5 and double down if you particularly like one

Night flight? I’d ask for two glasses of the Bordeaux poured after take off and let them air for 2 hours while I sip the champagne and then enjoy the red with whatever meat dish they’re serving. Port after dinner.
Day flight? Chardonnay before and during dinner with a white sauced pasta or fish dish.

I’d definitely have a splash of the Levantine Hill Syrah. Yarra Valley is cool climate region and this wine will be a different expression of Shiraz to the Barossa/McLaren Vale styles that many non-Australian’s are accustomed to.

Definitely the La Grande Dame! I think EVA long haul serves the best bubbles of any business class product.

Go big. Between the low air-pressure and super low humidity your taste buds and sense of smell are not going to be working very well, so anything with delicate flavours will be lost
