Went for once to a cheaper sushi and ordered tuna and got this. the smell was strange, but not alarming. does anyone know why the tuna has different color?

    So you got cheap sushi. They already use the less ideal cuts for rolls and bowls. So you got less ideal cut of cheap fish

  2. Did it touch the ginger or lemon? It can appear cook like that from the acidity.

    On rare occasion, Kura’s tuna can look like this. Usually, it’s bright red (which still seems off to me… we’re talking about BRIGHT red) but one time I picked a pair of tuna sushi from the conveyor belt thinking they must’ve made a mistake and put toro on there instead. Nope. It tasted just like their regular tuna although the chew was a little softer.
