Welp, got my beef barley stew all set up, dishes done, putting things away… when I see the pile of potatoes I’d managed to forget.

What the hell, let’s chop and add ‘em.
Good thing I didn’t have more potatoes, because they absolutely wouldn’t have fit — and I was worried I wasn’t going to have enough!

I know it’s overfilled, but it’s stew that’s going all day, so it’ll be fiiiiiine.

    Recipe, loosely (who measures crock pot soups?):
    Cut, flour-dredge, brown some chuck
    Large chop onion, carrot, celery
    Sauté some sliced mushrooms
    Deglaze the pan with red wine and beef broth
    A cup or or of barley
    Chopped garlic
    Healthy pour of the oxidized stout that inspired the menu
    More broth
    Thyme, bay leaves, s&p

    I think that’s everything?
    Oh wait — the potatoes!

    The potato may end up being overcooked but it’ll only effect the texture and not the flavor. It’ll be a bit more thick than you intended most likely because the potatoes will be very soft and break apart when you stir and serve at the end of the cook but it’ll still be delicious! Just taste and re-season before serving, potatoes can absorb a lot of salt, see what you need to your taste and enjoy! Looks great!

  3. Looks like my crockpot when I cook just for me. I love leftovers
