As we near the end of summer, this is one of my favorite summer dishes, creamy zucchini pasta. In a pot, add good quality olive oil and a couple of cloves of garlic. We’re going to cook until golden, then remove. Then add your sliced zucchini. And we’re going to shallow fry this until golden. Then transfer onto a bed of fresh basil and lemon peel. And then in a separate pot, add your oil, garlic, chopped jalapeno, chopped lemon peel. Cook for about a minute. And then add your cooked zucchini, cooked pasta. And then we’re going to go ahead and alternate between adding freshly grated parmesan cheese and pasta water. Tossing everything together on low heat until the sauce becomes super creamy and emulsified. You can taste just seasoning to your liking. Right now, I added additional fresh basil, raw grated garlic, as well as more Parmesan cheese. I finished this off with more cheese, black pepper, and tons of fresh basil, as well as a drizzle of lemon olive oil. I hope you give this a try. Enjoy.
