My new favorite way of making beer brats. Shoutout to @nachocookin for the idea!

Adding sauerkraut, mustard, bacon, and my AP rub to the mix takes these to the next level!

This is my new favorite way of making beer brats, and I’m going to show you exactly how to do it. Start by cutting up three or four large yellow or sweet onions. Place them into a deep pan or a Dutch oven. Cut about four strips of bacon and place it right on top of the onions. Next, go in with about one cup of sauerkraut. Trust me here, we’re just building on those flavors. Next, go in with some horseradish mustard for a little kick. And season everything with my all-purpose seasoning. Place your brz right on top. I did about 10 of them. And finally, cover everything with your favorite beer. Set this off to the side, and it’s time to fire up the grill. I’m using my new Brio fire pit. I just picked this thing up last weekend. Place the brz directly over the fire over a medium heat. Jax was very curious about the new fire pit and the brz that we were making. Bring this up to a low simmer. Have a seat, have a drink, enjoy the fire, and mix everything every 10 or 15 minutes. When the brz are fully cooked through and the onions are soft, sear the brz directly on the grate. Get that beautiful char and crust on the outside. Place them back in that beer. Let them soak for about 15 minutes. And now it’s time to assemble. You got your broth, your delicious onions, some of that bacon, more horseradish mustard on top. And these beer brats are ready to go. Wow. Dad approved. These are the best beer brats I ever had. That is so good.
