in college i practically LIVED off of Trader Joe’s creamy roasted red pepper soup…but then I started making it from scratch & it’s so much better. šŸ˜āœØ

plus, this one-pot recipe comes together in 40 minutes…basically the time it takes to find a parking spot at TJs. šŸ’€

just simmer, blend, & finish with a splash of cream for a cozy, homemade soup that’s only made better with a melty grilled cheese on the side. šŸ„°šŸ’œ

Welcome back to Slowly Simmered Sunday, your weekly permission slip to slow down, let a pot of soup bubble on the stove, and reset before Monday rolls in. Because there’s nothing that feels more like self-care than making a giant pot of soup to enjoy for the week ahead. And this creamy roasted red pepper soup is exactly that. It comes together in just 45 minutes, but tastes like something you’d find at your local cozy cafe. Roasted red peppers, aromatic veggies, a splash of cream for texture, and just enough warmth from smoked paprika and crushed red peppers. For maximum coziness, serve it on the side with a melty grilled cheese. This is a simple recipe, but it delivers so much comfort. Proof that with little extra care, even the most humble ingredients can become something special. Kind of like when we slow down and give ourselves the same attention. So, grab the recipe in the caption. Follow plays well with butter for more. And be sure to come back next week for my newest soup recipe. Happy cooking.
