This is what I made my family for lunch today. It’s one of my favorite appetizers. Spinach and artichoke dip, but turned into a pasta. And it only cost $8 to make. Let me show youall how to do it. Hey, so here’s what you’re going to need. Starting off, you’re going to need a box of pasta, whatever shape you like. I’m going to go ahead and pop that into my water cuz it’s boiling already. This is a 12 oz bag of frozen spinach chopped. No, I didn’t defrost it. No, I didn’t rinse it and drain it. No. Like, yeah, it’s going to give off some water, and that’s okay. We need that for our sauce. Turn that on and just just let it do its thing. Let it start to melt. Also, oven on 350. One can of artichoke hearts. Open it up. We’re going to drain it. Artichokes get chopped. Add them in. Black of cream cheese going in. Remember how I said don’t defrost the spinach cuz we’re going to need some of that liquid. I reserved about 3/4 of a cup of my starchy cooking water from my pasta. I’m going to pour that right over the cream cheese. A little piece of pasta. Get in there. Let this relax. Let this melt. For seasonings, we’re going to go super simple. Salt, pepper, and garlic powder. I always say in this meal series, I never account for the cost of those because it’s so minimal. Like a thing of garlic powder. A whole container of it might be like 80 cents at Aldi or Walmart. So, salt, pepper, and garlic. Now, the cream cheese is almost fully melted. I’m going to add in half of my 8 oz bag of mozzarella. It’ll look something like this. Carefully adding in my pasta. Adding this into a casserole dish. Also could have used a bigger one of these, too, but whatever. It works. Top it off with the remaining half of your mozzarella. All right, this is going in the oven at 350, just until the cheese is nice and bubbly. It just came out of the oven. As always, I will leave a grocery list right here of everything that you guys need to make this. We’ve got some lunch to eat. I will talk to you guys later. Bye.

Made this tonight for myself, froze the other half for another time. Picky family is welcome to try but they get jar sauce for their pasta !
My husband believes it is not a meal without meat. I was thinking of maybe adding some ground beef or italian sausage or get the fajita bag of precooked chicken ( or maybe steak 🤷♀️)

Just happened to be scrolling by and stopped to watch. So glad I did. This has to be one of the easiest meals to prepare and it's something I've never had before. Instead of putting it in a casserole dish, you can add a large box of chicken broth and make soup.
