I tried this for my (now ex-)wife’s birthday one year. I realized my cooking skills were not good enough to make the bread so I used Pillsbury biscuit dough. It worked out OK.

You knocked it out of the park. I love my meat pretty rare so that looks perfect to me. If you do it again take care if you cook it longer. I feel like they go from rare and perfect to over cooked extremely fast . It might have to do with the meat steaming inside of the prosciutto and all the goodness. Just a heads up.

Too rare, happened to me too, but only because my roommate told me it’s ready. I had the recipe, I made it and my timer wasn’t there, but I was dumb enough to think he’s right. This was the last time I listened to him regarding cooking.
