My 18 yr old made this loaf all by herself this week, she’s quite good actually. This is my little Amazon bread slicer, I’ll add the link in the comments if anyone is interested, it’s on sale now for $59 I believe and it works so freaking well, I mean look at those slices !!!
Recipe:
115g starter
350g water
550g of bread flour
10g salt
Mix, 3 sets of stretch & folds one hour apart, bulk ferment based on visual cues, cold retard for like 12 hrs. Baked at 400° covered for 40 mins, uncovered for 5 mins.

Here is the link for the [bread slicer](https://amzn.to/3JVWeYz), totally worth it, but the trick is to refrigerate the loaf overnight.
