The other day, I found this recipe for bean pie that intrigued me (I tried to post the image, but it won't work). Today, I tried it out for the first time. It calls for pinto beans, but I used some red adzuki beans I already had. I just used a ready-made frozen pie crust, and the whole thing was done in under an hour. Could be a great bring-along for holiday get togethers.

The recipe in text is as follows:

1 C mashed beans

1 C sugar

3 egg yolks

pinch of salt

pie crust

3 egg whites

6 Tbsp sugar

pinch of salt

Heat oven to 350F. Thoroughly blend beans, sugar, yolks and salt until smooth. Pour into crust and bake on middle rack for 30 minutes. For the meringue, beat whites with a pinch of salt until frothy. Gradually add sugar and beat until glossy and stiff peaks form. When the 30 minute bake is done, pull out the pie and cover with meringue. Return to the oven to bake 10-15 minutes, or until meringue is set and slightly brown on the edges.

Cool to room temperature before cutting. Store in the refrigerator.

Serves 6-8
