

My latest obsession is chicken drumsticks with a quick Avgolemono sauce. 2 hours at 158F and then broil at 500 until it’s your liking of crispy.
In case it sounds good to anyone else, the knock off egg-less sauce I make is:
1/2 cup minimum bag juices (add chicken broth if needed)
Slurry of 1 tsp cornstarch in lemon juice and 1 tsp Dijon (maybe 2-3 teaspoons or so 1/2 a Lemon)
Bring juices to a simmer
Add slurry
Cook for a minute and done
I season the chicken with onion powder, garlic powder, paprika and turmeric before bath time. It’s so juicy, so flavorful, and so cheap!

Nice, eating delicious and economical
I’ve been on a tear with wings lately. Lightly sautéed onions and garlic, olive oil, spices. Sous vide at 165 for 2 hours and let cool in the fridge. Separate the onions and fry or bake the wings. Leftover onions and juice is a starter for French onion soup.
How long do you broil and how crispy does the skin get after soaking that long?
I would sear it with a torch next time
My plan for Thanksgiving this year is to forego the whole turkey and just sous vide a bunch of drumsticks, then sear ’em on the charcoal grill.

You could go lower on the sv temp frankly. But I’m sure they were delicious! I’ll have to try.
