Any recommendations on cooking? Marinades are unfortunately out due to a lot of allergies in the house.

If it’s already split you’re good to go. Season with whatever you can and grill out a few minutes each side. Love flat iron.

There’s a tendon down the middle. A flat iron steak is usually cutting it in half and removing the material. I believe that is what is meant by “split”.

I know it’s a totally different cut….but get that arrachera they have. It cooks up amazing grill, broiler or 450 oven. Best fajita meat ever but I end up just eating it in a pile most times.
So good for a lazy mode fajita night.

No marinade required. This is the second most tender cut of beef. Just season it and throw it in a pan/on the grill. Spray your grill with some non stick oil if you choose to go that way. I’ve had thin, lean cuts like this and flank get stuck to my grates before.
