Welcome to Mimi’s Kitchen. Oh y’all, can you believe that it is November already? Oh my goodness. And you know what that means? Everybody is getting ready for their Thanksgiving feast. Oh, and what buffet would be complete without a sweet potato dish? Actually, we’re going to marry two recipes today. Right here in Mondays with Mim me are the two recipes. It’s actually page 71 and 72. And one is called sweet potato soule and one is called sweet potato casserole. Now, the reason I’m doing this is I like this sweet potato casserole recipe best because it has the evaporated milk and I just think that’s a little richer. And then the other one is because of the topping. This one doesn’t have a topping. This one does. So, we going to take the best of both of them, and that’s what we’re going to do. Now, the first thing that you’re going to need is three cups of of cooked sweet potatoes. Now, I’m going to tell you, it doesn’t matter. You can boil them, you can bake them, you can use them out of the can. I’m going to tell you, a few weeks ago, I made this for my family. Oh my gosh. And I used the canned sweet potatoes. They never knew the difference. We did not. Hey, that was that worked out good. So, today I baked mine. Yes. Because I’m making sweet potato other stuff and so it was just easier to bake all of them at one time. All right. Now, the first thing that we’re going to do here is to add to this 1/2 cup of packed brown sugar. Okay. Oh yeah. And then a half a stick of butter. Looks like they could have used a whole stick. Now we’re going to mix these until that butter is melted. So here we go. Okay. Now we’re going to add two beaten eggs. So Okay. Yeah, there’s one. Two. Okay, let’s beat them up good. All righty. Let’s pour that in there. Okay. All right. And then it says a half a teaspoon of salt. Well, let’s see here. That looks like a half a teaspoon to me. This one/2 cup of evaporated milk. And I use carnation, y’all. All right. Two teaspoon of vanilla. Okay. All right. And you use Watkins when you can find it. Oh, yeah. Y’all, it is so good. Oh. Oops. Look. The spirit kind of got wild there, y’all. That’s what I use. It It’s called Watkins and it’s called bacon vanilla. So, now we’re going to mix all of these ingredients until they get very well acquainted. And while they do, guess what, y’all? Our oven will set on 325. Okay, y’all. The instructions don’t say anything about greasing this pan, but you are for good measure. That’s right. One thing’s sure, it won’t hurt anything. This smells This smells so good. I think it’s that vanilla in there with that potato. Oh, yeah. Oh, y’all look at there. Ain’t that pretty? I want to tell you this recipe came from Ann Rash. That is McKenzie’s husband’s mother. Did you follow that? Yeah. And um when I was putting Mondays with Mimi together, um Ann entrusted me with this recipe and I just couldn’t wait to try it. And so, oh my goodness, it knocked my socks off, y’all. I mean, I just loved it. But in fact, I like it better than my own, but but it didn’t have a topping. So, and just like we had members of our families to marry, we’re going to marry these recipes. Okay. Now, let’s make our topping. And this is the other half of that butter. I wasn’t going to leave a tablespoon out. So, it calls for three tablespoons. Oh, yes. Yes. Yes. So, let’s Put that in there. All right. Now then, one cup of brown sugar. Whoa. Hello. All right. 13 cup. Of allpurpose flour. Okay. Oh, my topping calls for um a cup of pecans. Now, I have nut allergies in my family, and today I’m not going to use them, but you feel free to use them, you know, and so we’re going to It is good. It is good with Yes, it is. We’re going to mix this right here. Now, what we’re trying to accomplish here is kind of like a All right, let’s I’m just going to dump it all on there, KK. And then we’ll spread it. Oh, y’all, this always adds so much. Now, I say just dump it on there. Well, don’t dump it on there. Take it and just kind of spread it out evenly on top. Okay. Okay, y’all. Now, we’re going to put this in the oven. Start with 30 KKK. Okay. Okay. Since I’m marrying these two recipes, the first half I’m going to cook at 325 and then the second half I am going to cook at 350°. And that’s so that that topping will get done. So, 15 minutes on 325 and then 15 minutes on 350. Okay. Okay, y’all. I don’t know what got into me, but you know how I have trouble spreading that topping. Well, I don’t usually melt my butter. Good grief. I mean, you know, I leave it so that when you mix it together, it makes kind of like a crumble. And then you just sprinkle it all over the top. Y’all, that’s what was wrong with it. But I can promise you this. The results are going to be the same. It’ll be sweet and it’ll be crunchy. Okay, y’all. The magic sound. All right. Now, okay, y’all. All right. Now, you see this is not done soap. [Music] See how how that is right in there. Okay. Okay. So, we’re going to cook this for 10 more minutes. I think that’s what it’ll take. Okay. All right. There we go. We’ll see y’all in 10 minutes. The magic sound. Oh, look at that. [Music] Oh, that looks yummy. It smells yummy, too. Now, y’all, we will definitely have to let that cool. Yeah, y’all. That’s what you call piping hot. Yeah, it is. Okay. and uh rash that I got this recipe from. Her grandchildren call her Boot. Have you ever heard such? I think that’s the cutest thing. I think it is too. Let’s see here what Boo and Mimi have together. All right. I know. I’ve tasted I know it. It is so good, y’all. Let me describe this a little bit for you. Now, the topping that I put on it, it adds a little bit of crunch and oh, the sweetness. Oh, y’all, it is so good. But then the casserole itself. Yeah. You said it was creamy. Yes. Oh my goodness. So, creamy, crunchy. Oh, yeah. It’s got it all, y’all. Our casserole is the perfect combination just like our families. This is going to be on my Thanksgiving buffet. That is similar to my late Momma’s recipe. Her topping though included shredded coconut with the pecans in the crumble topping. It is good.

Substitute egg nog for any dairy in sweet potato casserole or soufflé. If you can find pumpkin spice egg nog, all the better.

Back in the 70s my mom got the recipe that everybody’s been raving about for the last several years from a friend and we’ve had it on our Thanksgiving table ever since. When it came out many years ago, I just had to chuckle because this is something that we’ve made forever and ever and either me, my mom or my daughter would bring it, and if you didn’t, there was gonna be trouble
