Tried the 3.2.1 method for the first time… came out pretty good. Had to go 1.5 that last step and raised the temp to 255 pulled at 195 … amazing smoke ring 😮💨

This looks like a mix between 3-2-1 and party ribs…. I’d imagine the long cook would dry out the pre-sliced ribs, but if they came out nice then more power to you!
When I do party ribs it usually takes 2-3 hours total, and the second half is in a tray with a bunch of butter and sauce to keep them moist
