Heim has really gone downhill in their consistency. Sometimes I go there and it’s great, other times the brisket is dry.
If I’m paying for craft bbq, I don’t want to wonder if it’ll be good this time or not.
I just started going to Panther City instead, it’s right down the road. Great every time.

Heim’s brisket is decent. Not spectacular, but decent.
I am, however, a fan of both their sauce and their sausages – and, for that matter, their potato salad.
Heim is to the Fort Worth barbecue scene as Stiles Switch is to that in Austin – it’s not a life-altering experience, but it’s a dependable option that yu can decide to get on a whim without committing to a two-hour wait and/or potential disappointment when you arrive to find that they’ve sold out of the one thing you were craving.
Personally, I’m a fan of the Smoke & Bone trailer off North Main over by the old drive-in. Panther City is also good when it’s good, although their sauce leaves a little to be desired.
