One of those moments where life and wine intersect. The wine was an intellectual treat. It was a 21 Ried Lamm, so tight when we first opened it. Hell, the cork was hard to get out too. But after two hours, right as we were celebrating the big news, it blossomed.

It became creamy with all that beautiful pear and apple coming through once the acidity wasn't so sharp. Having that specific bottle transform like that, on the same night I found out I'm going to have a nephew/niece…it cemented the whole night. I'll never forget those flavors now, they're completely tied to this amazing core memory.

    Hirsch makes great GV too from this plot, slightly different style. Both are worth tasting and within the top of Austrian wines
