1. Get a muffin pan and lightly grease each muffin cavity, leaving only a thin film. 2. Preheat oven to 350°F. 3. Melt the butter in a saucepan over medium heat until golden brown and nutty; let cool 15 minutes until warm. 4. Whisk the browned butter with the granulated sugar and brown sugar. 5. Add the egg, honey, and vanilla; mix until smooth. 6. In a separate bowl, combine the cornmeal, flour, baking soda, baking powder, and salt. 7. Add the dry ingredients to the wet and fold until a thick dough forms. 8. Chill the dough for 20–30 minutes. 9. Scoop 30g of dough into each muffin cavity 10. Bake 10–12 minutes, until edges are lightly golden 11. Cool in the pan for 10 minutes, then run a butter knife around the edges to lift them out.
You can add anything you want to the top or leave it plain. I just made some buttercream with some leftover butter, powder sugar, honey, cinnamon, and nutmeg
