Italian rainbow cookies but make them spooky vibes for Halloween
Do you call them rainbow cookies? Or tri color cookies? Or seven layer cookies?
It was my first time making Italian rainbow cookies and whilst I’m impressed with my first go round, there are quite a few things I would do differently…first of all, I do NOT like Trader Joe’s new almond paste, it’s too hard and near impossible to mix into the rainbow cookie batter, so l’m going to try a different brand the next time I make Italian rainbow cookies
I also think I want to try one layer with apricot jam and one layer with the raspberry jam. Here I did just raspberry jam and it was delicious but I think it can be even better. I also think I need more almond extract, it didn’t pop as much as I had hoped.
All in all though, these Italian rainbow cookies hit the spot this weekend and are already gone!
