
I have been struggling with baked goods since I adopted the Mediterranean diet. My kids miss desserts the most. Here is an almond and coconut flour cookie with monkfruit powdered sugar frosting. Everything homemade and “healthy,” except for the dash of sprinkles because, let’s face it, aesthetically, these cookies need all the help they can get 🤣 (I’m not good at “pretty” 🥴)

I don’t think people in the Mediterranean “struggle” with baked goods.
It’s okay to have sweet treats occasionally! Just not a daily thing in Med diet. Here’s my oat cookie recipe. They’re basically pantry cookies, no dairy or egg needed, and they freeze great.
Walnut Oat Chip Cookies 🍪 (or Walnut Cran-Orange Cookies)
* Ingredients:
* 1 cup raw rolled oats
* 2-3 grinds of sea salt
* 1/4 cup whole wheat flour
* 1/2 tsp baking powder
* About 5 shakes of cinnamon
* 1/2 tsp vanilla extract
* 1/4 cup chopped walnuts
* 2 tbsp dark chocolate chips or chopped dark chocolate (Note: also good with 2 tbsp dried cranberries and some orange zest instead of chocolate)
* 1/2 cup pure maple syrup
Using a fork and 1 bowl, combine ingredients from driest to wettest. Transfer cookies to a baking sheet using an ice cream scoop. It’s not a sticky dough; flatten slightly and pat them into shape (no added fat, so they won’t spread during baking). Bake at 350° for 16-17 minutes, then remove from oven and let rest on the baking sheet for 10 minutes. They won’t look browned, but if you let them sit, they will be well-formed, crispy outside/chewy inside. I make 7 good-sized cookies, but you can make them smaller if you like.
I usually take dates, stuff them with crunchy almond butter and drizzle dark chocolate over them, top with flaked sea salt and allow to set in the fridge. I take one or two pieces when the sweets craving is high. Not specifically Mediterranean but not the worst thing either 🙂
