I work at Kroger Fulfillment and bought a bag of meat that was accidentally delivered to our warehouse, it was on a pork rib pallet so I’m assuming pork, each piece has a bone on one end. after that I have nothing. Thanks in advance for any info

    A market that I used to work in called them pork sparerib briskets. Basically, it’s what’s trimmed off St. Louis style/center cut pork spareribs. It’s the sternum bone with meat and cartilage from the tips of the ribs.

    Rib tips. Cook them like baby backs or chop them up for stews.

    Looks to me like we call rib tips at least here in Chicago. As said above, it’s what’s cut off the spare rib after trimming them to St. Louis cut ribs.

    As others have said those are rib tips you can cook them like ribs then toss them in sauce. I literally just ate some yesterday lol.

    Makes for good BBQ and can still make stock from what’s left over. Lots of chewy collagen/cartilage

    This is the brisket bone of pork. Cook right and it’s great. Makes great soup too
