20 hours is absurd. I did did one yesterday and went of the offset at 8am and was done by 3pm. No spritz. Salt pepper and smoke. I’d look into trimming them. Helps cut the cook time down and you dont huge huge pieces of fat.

I forgot to add, the brisket was 19 pounds and I got it at Costco. I’ve cooked large briskets before, but I don’t believe I had one that weighed over 16 pounds. Monster.
