to Wednesday night live at 5 here in the Organ family cooking kitchen. We’re getting ready to make a key lime pie because it’s getting into time of the year and especially at holidays. So, we are going to be doing some pecan pie and pumpkin pie maybe later this week or in the next week. But today we’re doing key lime pie. Welcome in. Thank you for hanging out. We’re getting started here. I’m going to give it just a minute for y’all to get here. But I do have currently my juice is already been juiced, but I need some zest for the filling. The filling’s very simple, but we’re going to do the crust first. So, so far I have a 9 in pie pan that I have buttered up. You can use spray as well. My oven’s at 350. I’ve already got my juice. I only needed half a cup, but we got more. We’re going to be making some limeade later tonight on another for dinner. Thank you. Hello. Hello. Hi, Shantel. Hi, Linda. How are you? Welcome in. So, key lime pie I made for the first time, not just this year, and it’s so easy and good. I was like, what? It’s that easy and good. Let’s do it. So, the eggs are for the filling. I’m going to set this aside and we’re going to do the crust. The crust is 1 and 1/2 cups finely crushed graham crackers. Now, I do use the honeymade original um original kind, and I do like that brand better for the crust. I’ve tried store brands and they don’t stick together quite as well for me. Maybe it’s the added sugar. I don’t really know. Okay, so 1 and 1/2 cups of the crumbs, 2 tablespoons granulated sugar, welcome in. We’re making the crust to the key lime pie. This bakes only for 15 minutes. It’s a a quick bake, the whole pie. And the crust some crust. I got a big chunk in there, which is what I’m working on right here. And the crust is literally only this four ingredients. Am I right? Oh, a little bit of salt. Five ingredients. So, it’s a cup and a half of finely crushed graham crackers. Not a lot. Two tablespoons brown sugar and two tablespoons granulated sugar and about a half a teaspoon of salt. We’re making the graham cracker crust to our key lime pie. Yum. Welcome in everybody. Please click the thumbs up at the top of the screen. Mix those ingredients together. Then I have half a cup of melted butter. And you’re going to just put that together. Ding. You’re a winner. And that’s your crust. So again, one and 1/2 cups of finely crushed graham crackers that I did in the processor earlier. 2 tablespoons granulated sugar, 2 tablebspoons brown sugar, and a half a teaspoon salt. Whisk that together. Then add in your half a cup of melted butter and mix it together like so. Then get your 9 in pan, pie pan. And I have buttered this. You could also just spray it. I like the taste of butter. Usually overspray, but I have a choice. See if I can do it with this big bowl. It’s a big bowl. Big old bowl. It is a big old bowl. Okay, welcome in. So, this is the crust. See how easy that was? Five ingredients. Boom. So, I kind of try to get it as even as I can. Before I usually take a flat object like or not a flat, an object like so and start in the center and push it out. So, Tracy, welcome in. Shank, welcome in. So cute tonight. Oh, thanks, Nana. We’ll start pie crust and then we’ll move to pecan pumpkin and so forth. The key lime is this simple and it’s the graham cracker crust. So then it’s done. That’s your crust. Tada. Okay. Set it aside over there. Then we’re going to make the filling. And the filling is four egg yolks. Yolks. I have to tell myself it’s like put this over here in the view. My bad. I’m going for yolks. I have to tell myself that. I’ll go opposite. I made it. It’s iffy if I’m going to make all four of these in that trash that’s a little far away. Welcome in, Terry K. Hi, Terry. Welcome in everybody. Old lady flex is pretty good. Middle-aged reflex is pretty good. So, we’re going to need the zest of two of these guys. I’m just going to do right here on my mat cuz it’s clean and it’s easy to get it off the mat if it sprinkles down there. You’re weird. Kind of goes everywhere, but I’m going to catch it. We’re going to get it in there. So, the zest of two limes It’s very zesty smelling right now. Let’s go up a notch. If you think my table’s shaking, it is. It’s not you. It’s the table. Are you pale yellow yet? Almost. It’s literally like three or four minutes. I’ve never actually timed it, but you can tell it changes color. Let me get it up. He threw two in one and that makes it hard. Listen, you know, this can is irritating me now, but we’re going for it. We’re slowly adding it. All right, I got it all out. I slowly added it. I’m going to scrape that edge with a spatula. Still 10%. No. Oh, you’re hilarious, honey. He set me up. Okay. Then you put in half a cup of lime juice. Freshly squeezed. Half a cup. That was about six limes. My son did it for me. I didn’t want to do it. He’s a good boy and did it for me. All right. Half a cup of the lime juice. [Music] You don’t have to like it to hang out. And then the zest of the two limes that we did. and just till combined. So, I’m good. I’m turning that off. I can use a spatula. Except now I have it all over there. So, let’s get it in there. Get off my I’m going to need this, babe, for my whipped cream. Can you please wash it? Wash it. after. Okay, so that was four egg yolks. Whisk until they became pale yellow, which was probably 3 to four minutes roughly, I don’t know. Then I slowly added in one can of the 14 oz sweetened condensed milk, 1/2 cup of freshlysqueezed lime juice, and the zest of two limes. That’s the filling. Just like that. Now, my oven is preheated to 350. Thanks. All right. 30 67%. Yes. Like I pie 32%. So the other 32 you’re just here to watch key lime pie or me or just happen to be here. Key lime pie or lime pie or anything minty? Oh really? Whoa. Minty. You don’t like chocolate mint. That’s anything minty. So okay everybody. Bummer because we’re making chocolate mint cupcakes or brownies later. Just kidding. We were though. Don’t forget to click that thumbs up guys. Show you my candy. Give us a like. But thank you. And that’s your filling. Tada. And then you bake it at 350 for 15 minutes. Ow. Don’t burn yourself. Don’t burn yourself getting it in there. Okay. 15. Boom. And then I’m going to make whipped cream and cut the lime for the top so we can top it. Can you get this out of the Oh, heavy. Thank you. So, literally just bakes for 15 minutes. You pull it out. You let it cool completely before topping. Now, we don’t have that kind of time on a live like this. So, guess what Shannon did ahead of time? She already cooked one up and it’s been cooling in the fridge. So, watch magic. poof like that. Now I have two keyn for it’s going to go to Amanda or or or Starland and I anyway. So here’s one I only you know I have two pie pans. One’s blue and one’s that amber color. So here you go. Blue. Same exact thing. I just did it a few hours ago now. Yeah. It’s cooled cuz I didn’t want to have to wait the 15 to cook, which isn’t long, but I wanted it to be completely cooled before I top it because that’ll ruin your whole pie. So, what I do is I do a simple whipped cream. So, again, you can just buy yourself a tub of this or you can make it Kaitlyn. Hi, TV magic. I know. Usually we are doing other things like dinner and stuff, but this live can’t tell said she wants Chantel. You got to come back and get it. You got to come get it. We’re going to hop for I can’t deliver. There’s no There’s no delivery or Uber Eats here. Okay. So, for whipped cream, I’m going to make um a double batch. So, I’m doing two cups of heavy cream. So, in other words, one 8 oz tub of whipped cream would be one cup. But I like to have extra because we’ll use it within a day. Yes, we will be on PT after this. Yeah, we’re going to do um Salbury steak, mashed potatoes, gravy, peas, andor green beans, and peppermint brownies. I was really doing that. Seriously. Okay, I seriously was doing that for you. I wasn’t kidding. That’s for my brownies. I got some candy canes today. Okay. So, then you just whisk your heavy cream until it’s turns into whipped cream. But I also like to top it with some fresh kiwi. So, we’ll slice a little of this up. Out in English. Do you speak any other languages? No. I’m sorry. I don’t. I do not I couldn’t even ever figure out pig Latin when I was a kid. Sorry. Okay. This recipe is the last video, the last short video I posted right here on YouTube. So, the recipe is at the end of the video in a format you can screenshot it, pause and screenshot. And you can purchase your own whipped cream, but I like to make my own. And then I like to uh top it with the whipped cream and some slices and the little graham cracker scattered on top. And we’ll get the toppings together while our whipped cream whips. I think before the holidays I’m going to try to get these into 12 uh 12 like mini pies. I just have to adjust the recipe. So stay tuned. Just so you have mini pies to uh dish out instead of a whole pie. All right. So then with your whipped cream, you’re going to add in a little bit of powdered sugar, which is literally generally a tablespoon for one cup or 8 oz, but I doubled it. And then I like it a little sweeter, so I add a little extra. Then vanilla. I was just looking at it cuz I got nervous. It’s looking almost done. It’s about a teaspoon of vanilla again per cup. I know it seemed like a lot, but the flavor, baby. Okay, it’s almost there. I’ve got these toppings. I also still have some graham crackers that I had. This is how I got my crust. We’re done. We’re done. You’re done. I did it in this. But if you do not have a processor or even I have my smaller chopper, um you can put it in a plastic bag and mallet it and get it as crushed as you can for your crushed. But a processor really really helps in that step because it gets it really crumbly. But you don’t have to have one. I didn’t have one. My little chopper. I’ll just do smaller batches. You need a cup and a half of the crumbs for your crust, which is about 1 and 1/2 packets of the graham crackers about. But measure it out. caring the kids should drink vanilla out of the bottle. Did you think it was so good? You were just like that smells alcohol. Don’t say that. He didn’t say that. She said it. Oh, okay. Oh, well, maybe. I don’t know. Okay. So, we got all the pieces. Now, I’m going to pipe the whipped cream in a bag to make it look nice. Pipe it in a bag. I’m going to put it in a bag to pipe it. And our pie, the one we just so you saw how I made the crust in the filling, it’s got about seven minutes left on the bake. It’s a different one because I couldn’t find it. But it’s still cute. Little swirly duries. It actually looks like whipped cream. Wow. Thanks, babe. Thanks, babe. Yeah, with all the without all the ingredients you can’t uh pronounce on the just like that with very little talent, you have a pretty good looking pie. And then I kind of try to go in the center. We’ll see if she can do it. Give a little pile of goodness. real close. A little off right there, but if you look at it this way, you’ll never know. Shh. Okay. Then I literally just put one in the middle and then some littles like every other. And I flip them around. You can do this part literally however you want. Get creative. Yeah, get creative or don’t. But yum. Okay. And that has 3 minutes left. It bakes for 15. So, what we did was we made a crust with 1 and 1/2 cups of very fine crushed graham crackers, 2 tablespoons brown sugar, 2 tbsps granulated sugar, and half a teaspoon of salt. I whisked all that together. Then I added in half a cup of melted butter. That’s my crust. Then I just mixed that together until it was well mixed. And then I uh pressed it into the bottom of my 9 in pie pan that was well greased. I used butter. Then the filling. See if she can remember. Four egg yolks that we whisked 3 to four minutes until they became pale yellow on medium speed. Then I added in one 14 oz can of the unsweetened I’m sorry, 1 14 oz can of sweetened condensed milk. And then I added in 1/2 cup of freshlysqueezed lime juice, the zest of two limes. Is that everything? That was it. That’s your filling. Then I filled it. I baked it for 15 minutes. Then you let it cool completely. That’s where I already had one done and cooled so that we could move on and do the topping. But the one we did just a little bit ago has 1 minute left. So, we’ll let that pull out so you can see how it looks when it comes out. This one was cooled completely. Then we made some whipped cream, topped it, put some sprinkled graham crackers and some fresh lime on top. And that’s a key lime pie the way I do it. But we can cut one. This thing chilled in the fridge about an hour and a half. So, you know, the longer it chills the better. But I’m not afraid to open it up, put it on a plate, test it out. Plus, I really want to taste it. So, this is the second time or third time technically now that I’ve made this pie. And I was so surprised at how good it is and how easy it is. I thought, “Oh, that’s got to be intimidating to make a key lime pie.” And then it wasn’t. It was literally that easy. So, let’s see if I can get it out of the pan in a beautiful way or not. It’s 50/50. The first piece usually never comes out beautifully, but it still tastes good. Smile. You’re on camera. All right, we’re going to try to get a piece here. I don’t know. Just go for it. Drum roll. See if I can get it without losing the tip. Oh, I got the tip. That’s like, oh yeah. Okay, there we go. So, it came out. And the one we prepped while on the actual live is ready to come out of the oven. Get another piece for big daddy over here. Smells really good. Come here. You come here little piece. Okay. Don’t mess around because if you add, you know, key pie is generally not served warm or hot. So, it’s usually served cool. So, that’s what we did earlier right here on the live. And then this is the one I did earlier so that it was cooled and we could just get it done like so. You want to taste it, honey? Sure. All right. Tasting coming up.
