    Cooked shallots, garlic, and grated ginger, added pork broth, and soy, overcooked the eggs, and it was a bit salty and lacked full flavour. What Japanese flavorings should I have added?

    Where did the saltyness come from? Did you use Dashi? You need that umami boost in a bowl off ramen imo. Not too much, but it has to be there.
