Hey y’all !!
This week, I made some really good dinners.. I’m a little stressed and diving into my cooking has really helped me feel a little better. 💞
First two pictures are of a meal my fiancé requested a few nights ago. He asked for “something Italian” when he called me on his drive home from work- so I looked in my fridge and freezer and had all of the ingredients for Chicken Parm! I made a homemade sauce with crushed San Marzano tomatoes and added some spice to it too. Served with spaghetti and it was incredible.. better than the average Italian restaurant 🍝
Third and fourth pictures are of a Buttermilk Roasted Chicken, served with Jasmine Rice and Carrot “fries.” I marinated the whole bird in some leftover buttermilk and a bunch of kosher salt, added black pepper and a *pinch* of dried rosemary. It was the best roast chicken we’ve ever had.. considering doing a Turkey this way for Thanksgiving since it’s generally bland and this was way better. If anyone’s done this, please give me some tips. Was also trying to clear my fridge and honestly, I’m not a fan of carrots. I decided to roast them with some garlic powder, parmesan, olive oil, and cornstarch. They got crispy and I loved them dipped in ketchup. Best carrots I ever had honestly.. tasted like sweet potato fries.
Fifth picture is a simple meal (bad pic though) of seared steaks, brussels sprouts, and scalloped potato gratin (alla NY Times/Kenji Lopez recipe). I made an NY Strip and a ribeye and both were good. The potato gratin was awesome. I made my fiancé roast potatoes, but he enjoyed the gratin as well.
Sixth/seventh photo is buffalo chicken dip. Used the leftover buttermilk chicken and… secret ingredient cottage cheese for more protein. Surprisingly solid and we both enjoyed with peppers and homemade chips.
Eight and nine are a dinner.. yes, I wanted bagels for dinner! So I baked bagels. They were really good for my first time and I had a cheese bagel with cream cheese. I love making things from scratch 🙂
Final photo is some homemade Browned Butter Chocolate Chip cookies, enjoyed in front of the Christmas tree of course. They are so tasty and my fiance brought some to his work as well.
