This method works surprisingly well! The basic idea is to drill holes in some square stock steel and then do the same on some flat stock or angle iron for the crossbeams. You then wire the bird onto the cross. I first did this with lambs and figured it would work for turkeys as well.

An important part is to have about 8-12" of square stock that is one size up or down from the vertical square stock. You pound that halfway into the ground at a 60 degree angle towards the fire, and the turkey cross then slides onto that. This allows you to flip and invert the turkey a number of ways to get even cooking. I rake coals towards or away from the turkey to control heat as well, that results in much more even cooking than using direct flames.

I started doing this when I was asked to cook a turkey at other peoples' houses. The set up packs up very small (I've taken it on planes and buses) and it allows me to cook outside and avoid the kitchen madness that occurs every Thanksgiving.

    I think it may work for camping or rustic cooking but for a traditional meal, the indoor cook and presentation is probably what most are looking for. I tried grilling a whole turkey and even a small one is hard to handle on a grill and turning over and adding coals can be difficult. It turned out better when I cut it up.
