


Opened a whole whack of jars for some enchiladas last night! Forgot the cowboy candy and chicken stock jars in the photo, added those too.
Rolled up ground beef, black beans, and ball’s tomatillo salsa with some cowboy candy in flour to. Topped with cheese and ball’s enchilada sauce thinned with chicken stock and a few more spices. Served with pineapple mango salsa.

A few recipe observations (this was my first time tasting some of these jars I put up in the summer:
– the salsa verde ([link](https://www.ballmasonjars.com/blog?cid=roasted-salsa-verde)) is a bit flat coming out of the jar. Needed a bit more heat and lime and fresh cilantro after opening. Will likely sub jalapeños for the serranos or something even spicier next time
– canned ground beef is nowhere near as ugly as I’d been led to believe lol. And I love the texture for tacos.
– enchilada sauce ([link](https://www.ballmasonjars.com/blog?cid=enchilada-sauce)) — I made this exactly as written but it’s way too sweet for me. Assuming omitting the sugar is safe I’ll try it again but as written I did not enjoy this (hence the addition of extra stock and spices)

What brand/model of pressure canner do you have? Do you like it?
How do you do ground beef? Is fat a concern for you? I want to get into canning but fat seems to be a big no which seems to limit things.
