Coloring looks like trout but the preparation is usually for Ayu (sweet fish). Absolute delicacy in Japan if fished wild from rivers. Most are farm raised now. The picture does look like trout however because ayu has a yellow tint. What city were you in?

Could be Ayu aka sweetfish. They look trout like and are grilled on sticks like that to make them look like they’re swimming.

Looks like a trout. They taste ok. Im surprised its that popular. I grew up with a stream that always has trout this size. I dont eat them usually.
