
I just made the Jeni's base for the first time. As i was slowly whisking it into the cream cheese I noticed some chunks. I ran the rest of the liquid through a mesh strainer to catch the good.
Any insight on what caused this? Is it scorched milk or thickened milk from the cornstarch…?

I had something similar looking happen when my candy thermometer crapped out on me and I overcooked my custard. (Stuck in an ice bath, and turned out okay)
State your exact recipe and procedures you followed. How can you expect tips on them otherwise?
Saw it happen one time with my partner. She either didnt stir when adding the starch slurry or added it to a mixture that was too hot. Regardless its from the cornstarch gelatinizing.
Jeni’s base is trash and I hate it.
