This cheese has a pineapple aroma. It tastes good, but the smell of it is a bit funky. It's a dry cheddar.

That white powdery stuff on the top looks a little sketchy to me, I get something similar on cheese I’ve kept in the back of the fridge too long. I usually scrape it off. The 2 lb bars at Costco don’t look like this.

I’ve been wondering to myself for a few weeks if this was actually cheddar cheese. It doesn’t actually say on the package. So it’s a cheddar then?
I freaking love this stuff!! But I don’t notice any funk at all and I find it perfectly mild in taste but I’m just a newbie when it comes to fine cheeses.
Any recommendations on similar tasting cheeses or even better offerings? The reserve cheddar from them is amazing also.

I was doing some training in April at the Center for Dairy Research in Madison, Wisconsin, and a speaker couldn’t make it to one seminar, so we had a different guest speaker. He was an Irishman and super knowledgeable. The next day we had a different speaker, who casually dropped that the Irishman was the guy who came up with Dubliner. So many questions I should’ve asked!

This stuff sucks shit. Their butter is decent but th cheese is weak on flavour and has a really weird rubbery texture.

I love using it in a recipe for Instant Pot Guinness Macaroni and Cheese 🙂 and I love their whiskey cheddar in another mac and cheese recipe I like to make in the slow cooker that ends up solid with caramelized edges, and you cut it like a cake 😀
